Fresh Strawberry Bruschetta Balsamic (Printable)

Juicy strawberries and mint atop toasted baguette with a tangy balsamic drizzle for a summery bite.

# What You’ll Use:

→ Bruschetta Base

01 - 1 French baguette, sliced into 8 pieces
02 - 1 tablespoon olive oil
03 - 1 clove garlic, peeled

→ Strawberry Topping

04 - 1.5 cups fresh strawberries, hulled and diced
05 - 2 tablespoons fresh mint leaves, finely chopped
06 - 1 tablespoon honey or maple syrup
07 - 1 teaspoon lemon zest
08 - Pinch of sea salt
09 - Freshly ground black pepper to taste

→ Balsamic Reduction

10 - 0.25 cup balsamic vinegar
11 - 1 teaspoon sugar, optional

# How-To:

01 - Preheat oven to 400°F. Arrange baguette slices on a baking sheet and brush both sides lightly with olive oil. Toast for 4-5 minutes, flipping once, until golden and crisp. Remove from oven and rub one side of each slice with the garlic clove while warm.
02 - In a mixing bowl, combine strawberries, mint, honey or maple syrup, lemon zest, salt, and black pepper. Toss gently to mix and blend flavors.
03 - Add balsamic vinegar and sugar (if using) to a small saucepan. Bring to a simmer over medium heat and cook for 3-5 minutes until thickened and syrupy. Remove from heat and let cool slightly.
04 - Spoon generous amounts of the strawberry mixture onto each toasted baguette slice. Drizzle with balsamic reduction and serve immediately.

# Expert Advice:

01 -
  • It tastes like you spent hours in the kitchen when you actually just grabbed things from your pantry and gave yourself a pat on the back.
  • The strawberries stay juicy and bright, and the warm garlic toast holds everything without getting soggy if you time it right.
  • You can make it as fancy or casual as your mood demands, and it works equally well for a dinner party or eating alone on your porch.
02 -
  • Don't assemble these more than fifteen minutes ahead or the toast will get soft from the strawberry juices no matter how crispy you made it.
  • The balsamic reduction needs to cool slightly before you drizzle it or it'll make the bread soggy instantly, so let it sit while you're finishing the other components.
03 -
  • Buy your strawberries a day ahead so they fully develop their sweetness, but don't hull them until right before you're ready to use them.
  • If your balsamic reduction gets too thick, add a tiny splash of water to loosen it back up rather than trying to salvage a brick of vinegar.
