# What You’ll Use:

08 - 1/3 cup melted coconut oil (or unsalted butter)
09 - 1 teaspoon pure vanilla extract

# How-To:

01 - Preheat oven to 325°F. Line a large baking sheet with parchment paper and set aside.
02 - In a large mixing bowl, stir together oats, chopped mixed nuts, shredded coconut, sunflower seeds, cinnamon and salt until evenly distributed.
03 - In a medium bowl, whisk honey, melted coconut oil and vanilla extract until smooth and combined.
04 - Pour the wet mixture over the dry ingredients and mix thoroughly with a spatula until all oats and nuts are evenly coated.
05 - Transfer the mixture to the prepared baking sheet, spread into an even layer and press down firmly with the spatula to compact for chunkier clusters.
06 - Bake for 25–30 minutes until golden brown, rotating the tray once halfway through; avoid stirring to preserve clusters.
07 - Remove from the oven and allow the granola to cool completely on the baking sheet; it will crisp as it cools.
08 - Once cooled, break into large clusters and gently stir in dried fruit or chocolate chips if using. Transfer to an airtight container.
